We generally use New Jersey Oak, but also use smoke from alder.
Your smoked fish will arrive cold, but not frozen. It can stay unopened in your refrigerator for up to 2 weeks if stored at 38 degrees or lower. Upon receiving your fish, you may also freeze our product for up to 4 weeks. Once opened, fish is best eaten within 5 days.

We spent a meaningful amount of time on this one. Before we get our hands on the pristine salmon we cure and smoke, we wanted to be assured that the fish we use is the best available. We wanted to produce the finest salmon we could source. That meant find sources that are sustainable, don’t feed their fish stuff we would not want to consume, and harvest their fish in a humane and sustainable way. We thus source our fish from the Faroe Islands between Scotland and Iceland. Our salmon resources follow strict guidelines in all aspects of their delivering the best fish to us—so we can deliver the best fish to you. Good in and good out is how we roll!
